Yihualou Gangzi Noodles

Among Changsha's intangible cultural heritage items, there is a special type of noodle - Yihualou Gangzi Noodles, made with skills that are passed down from generation to generation. Unlike hand-made noodles made with a rolling pin, Gangzi (thick sticks) noodles are made with the dough that is carefully flattened by the chef pressing on a bamboo pole. There are three traditional techniques for making Chinese handmade noodles: pressing, pulling, and cutting. This type of noodle mainly uses pressing and cutting skills.
The process for making Yihualou Gangzi Noodles is as follows:
1. Adding egg white and edible alkali to wheat flour and kneading the mixture.



2. Rolling out the dough using a bamboo pole, folding it, adding flour to the surface, and repeating the process several times.



3. Rolling up the flattened dough and cutting it into ribbons.
